
Ingredients:
• 1/2 cup – Rice flour
• 1/2 cup – Flour
• 3 tbsp – Milk
• 1 tbsp – Lemon juice
• 3 tbsp – Oil
• 1 – Egg
• 1/4 cup – Powdered Sugar
• 1 tsp – Baking soda
• 1/2 tsp – Salt
• 2 cup – Mixed fruits (grapes, apple, pineapple, banana)
• 1/4 tsp – Cinnamon powder
• 2 tbsp – Sugar
• 2 tbsp – Cornflour
Method:
- In a bowl combine the flour, milk, lemon juice and oil.
- Cover and let it for 7-8 hours.
- Grease a baking dish. Preheat the oven. In a bowl, combine the fruits, cinnamon, 2 tbsp sugar and 2 tbsp. cornflour. Pour into the prepared pan.
- Bake the fruit for 10 minutes.
- Add the egg, 1/4 cup sugar, baking soda and salt to the soaked flour.
- Beat well until combined and all lumps are removed.
- Remove the pan from the oven and spread the cake batter on top.
- Return the pan to the oven. Bake for 35 minutes. Allow the cake to cool before serving, so the fruit mixture can be thickened.
- The cake can be served with flavoured yoghurt on top.
