Ingredients:

• 1/2 cup – Rice flour
• 1/2 cup – Flour
• 3 tbsp – Milk
• 1 tbsp – Lemon juice
• 3 tbsp – Oil
• 1 – Egg
• 1/4 cup – Powdered Sugar
• 1 tsp – Baking soda
• 1/2 tsp – Salt
• 2 cup – Mixed fruits (grapes, apple, pineapple, banana)
• 1/4 tsp – Cinnamon powder
• 2 tbsp – Sugar
• 2 tbsp – Cornflour

Method:

  1. In a bowl combine the flour, milk, lemon juice and oil.
  2. Cover and let it for 7-8 hours.
  3. Grease a baking dish. Preheat the oven. In a bowl, combine the fruits, cinnamon, 2 tbsp sugar and 2 tbsp. cornflour. Pour into the prepared pan.
  4. Bake the fruit for 10 minutes.
  5. Add the egg, 1/4 cup sugar, baking soda and salt to the soaked flour.
  6. Beat well until combined and all lumps are removed.
  7. Remove the pan from the oven and spread the cake batter on top.
  8. Return the pan to the oven. Bake for 35 minutes. Allow the cake to cool before serving, so the fruit mixture can be thickened. 
  9. The cake can be served with flavoured yoghurt on top.
