Ingredients:

• 1 cup – self-rising flour
• 1 tsp – Sugar
• 1 tsp – salt
• 1/2 tsp – pepper
• 2 – eggs beaten
• 1.5 cups – fresh corn, cut from cob (about three ears)
• 1/2 cup – Milk
• 2 tsp – oil
• Hot vegetable oil for frying

Method:

  1. Combine first four ingredients in a large mixing bowl; mix well and set aside.
  2. Combine eggs, corn, milk, and 2 tbsp vegetable oil; mix well. Stir corn mixture into dry ingredients.
  3. Drop mixture by rounded teaspoonful into oil heated to 375 degrees; cook fritters until golden, turning once.
