Ingredients:
• Cooked Rice – 2 cup
• Tofu – 200 g
• Green curry paste – 2 tbsp
• Coconut Milk – 2/3 cup
• Pearl Eggplant – 1/2 cup(sunda kai)
• Sweet Basil – 2 to 3 tbsp
• Kafir Lime leaves – 3
• Fresh Red Chilli – 1/2
• Palm Sugar – 2 tsp
• Fish sauce – 2 to 3 tsp or salt to taste
• Oil – 1 tbsp
Method:
- Stir fry green curry paste with oil and coconut milk.
- Add pearl eggplant fry till they are tender and add fish sauce and palm sugar.
- Add tofu and simmer till almost dry.
- Add the rice, chilli, kafir lime leaf and basil.
- Stir till well mixed. Serve.
