Ingredients:
• 1 cup – Rice flour
• 1 cup – Jaggery
• 1 cup – Coconut Milk
• 3 cups – water
• 1/2 tsp – Cardamom powder
• A pinch of salt
• 1 tbsp – Raisins
• 1 tbsp – chopped cashews
• 1 tbsp – Ghee
Method:
- Take the rice flour in a bowl and add a pinch of salt.
- Make a thick paste of pouring consistency by adding a little water to the flour. Keep aside.
- Heat a medium-sized vessel on a stove. Pour the remaining water to it, add jaggery, mix and bring to a boil.
- Strain the jaggery syrup.
- Add this to the flour mixture.
- Keep a pan on medium heat and add the jaggery-flour mixture and cook for 5 minutes.
- Finally add coconut milk and cardamom powder.
- Cook for 2 minutes while stirring continuously.
- Remove from heat, swirl a tbsp of ghee, garnish with raisins and cashews and serve.
