Ingredients:
• 4 – large raw crabs
• 4 – potatoes, quartered
• 2 – onions, ground to a paste
• 2 – onions, halved and sliced fine
• 1.5 tbsp – Turmeric paste
• 2 tbsp – chilli paste
• 1 tbsp – Ginger paste
• 1/2 tsp – Garlic paste
• Bay Leaves
• Garam Masala
• Oil for frying crabs and Potatoes
• 2 tbsp – Ghee
• Salt and Sugar to taste
• 2 cups – water
Method:
- Scrub crabs clean.
- Separate claw from body and crack open.
- Remove hard shell of crab.
- Rub in a little turmeric and salt, and fry until light brown.
- Keep aside.
- In the same pan, fry the quartered potatoes only until lightly brown.
- Keep aside.
- In a karahi or pan, heat 2 tbsp. ghee.
- Add bay leaves and garam masala.
- Stir fry for a couple of minutes.
- Add sliced onions and stir fry till brown.
- Add all the masala pastes, salt and sugar to taste.
- Stir and cook until masala changes colour, sprinkling with water as necessary.
- Add 2 cups of water, the fried potatoes and crabs.
- Cover and simmer gently until potatoes are done.
- Sugar may be added at the same time as the water.
