Ingredients:

• Coconut – 1 large
• Mixed Vegetables – 2 cups, diced (potato, carrot, beans, peas, Cauliflower etc.)
• Green chillies – 6 to 8, slit
• Oil – 2 tbsp
• Cloves and Cinnamon – 3 each
• Onions – 2, chopped
• Rice Flour – 1 tbsp
• Sugar – 1 tsp, optional
• Salt to taste

Method:

  1. Extract 1 cup of 1st milk and 1.5 cup of 2nd milk from the coconut.
  2. Mix all the vegetables with green chillies, add the 2nd coconut milk and place on fire.
  3. At the same time, on the other burner, heat oil, add cloves, cinnamon and onions and fry till onions are just wilted.
  4. Add this to the cooking vegetables and continue to cook till vegetables are soft.
  5. Add salt and rice flour mixed with 2 tbsp of water.
  6. Simmer for 2 minutes.
  7. Add the 1st coconut milk.
  8. Just as it begins to boil, remove from fire.
  9. Serve with rice, chapatti or bread.
  10. Variation: Potato Stew
  11. Boil, peel and lightly crush 1/2 kg potatoes.
  12. Heat second coconut milk with slit green chillies, chopped onion and ginger simmer for few minutes.
  13. Add potatoes and salt. Add first milk.
  14. Just as it begins to boil, remove from fire.
