
Ingredients:
• 300 g – potatoes, scrubbed clean, diced
• 2 stalks – Curry leaves
• 1 tbsp – coriander leaves, finely chopped
• 1/2 tsp – anchoor dried (mango) powder
• 1/2 tsp – chilli powder
• 1/2 tsp – Coriander seed powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Garam Masala powder
• 1/2 tsp – sambar powder
• 2 tbsp – sesame seeds
• 1 tsp – Cumin seeds
• 2 tbsp – oil
• Salt to taste
Method:
- Spread potatoes in a large microwavable deep dish. Pour 1/2 cup water, microwave on high for 5 mins.
- Remove, toss lightly, check if 80per cent done.
- Otherwise, return to microwave, repeat till excess water is absorbed.
- Remove, sprinkle all other ingredients over potatoes.
- Microwave on high for 2 mins.
- Take off fire, toss again, till flavours blend.
- Take off fire, garnish with coriander leaves.
- Serve hot with soft puries, phulkas, etc.
