Ingredients:

• 300 g – potatoes, scrubbed clean, diced
• 2 stalks – Curry leaves
• 1 tbsp – coriander leaves, finely chopped
• 1/2 tsp – anchoor dried (mango) powder
• 1/2 tsp – chilli powder
• 1/2 tsp – Coriander seed powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Garam Masala powder
• 1/2 tsp – sambar powder
• 2 tbsp – sesame seeds
• 1 tsp – Cumin seeds
• 2 tbsp – oil
• Salt to taste

Method:

  1. Spread potatoes in a large microwavable deep dish. Pour 1/2 cup water, microwave on high for 5 mins.
  2. Remove, toss lightly, check if 80per cent done.
  3. Otherwise, return to microwave, repeat till excess water is absorbed.
  4. Remove, sprinkle all other ingredients over potatoes.
  5. Microwave on high for 2 mins.
  6. Take off fire, toss again, till flavours blend.
  7. Take off fire, garnish with coriander leaves.
  8. Serve hot with soft puries, phulkas, etc.
