
Ingredients:
• 50g – Green peas
• 50g – Cauliflower florets
• 50g – Broccoli florets (optional)
• 50g – Paneer cubes (cottage cheese)
• 50g – French beans, thinly sliced
• 25g – green cabbage, shredded
• 1 – Capsicum deseeded and sliced
• 100g – spring onions, coarsely chopped
• 1 tbsp – oil
• 1/2 tsp – white pepper powder
• 1-2 – Green chillies
• salt to taste
• For fruit salad:
• 1 – Banana (cut into small cubes)
• 1 – Apple (peeled and cut into small cubes)
• 50g – green Grapes (deseeded and chopped)
• 50g – black Grapes (deseeded and chopped)
• 1 – Orange (deseeded and chopped)
• 3-4 – strawberries (chopped)
• 8-10 – Cherries (deseeded and chopped)
• 10-15 – Raisins
• 100g – Cream
• 125g – yogurt
• 2 -3 tbsp – Sugar
• black salt/salt
• a pinch or two – white pepper
Method:
- Heat oil in a kadai or wok and cook spring onions for half-a-minute.
- Add green chillies and white pepper powder to it and stir.
- Add cauliflower and broccoli florets and mix it. Cover the wok and cook it till it’s half done.
- Add capsicum and beans and stir it. Cover it and cook on a medium heat for another 3-4 mins.
- Add cabbage and cook for another 2-3 mins.
- Lastly, add paneer cubes and salt. Mix them well and cook uncovered for 2 mins.
- Garnish with green coriander leaves and serve it hot with parathas.
- To make the fruit salad:
- Take yogurt in a bowl and add sugar and beat it nicely.
- Add cream and mix it to form a uniform mixture.
- Add all the fruits one by one and mix them well.
- Lastly, add salt and pepper and mix them well.
- Decorate with strawberries or cherries and grapes and serve chilled.
