Ingredients:
• 4 – plain parottas
• 2 – Onions (chopped)
• 1 – Tomato (chopped)
• 1 – Carrot (chopped)
• 1/2 cup – Green peas
• 1/2 cup – green and red Capsicum (chopped)
• 1 – Potato (chopped)
• 2 – Green chillies (slit)
• 1/2 tsp – Fennel seed powder
• 1/2 tsp – pepper powder
• 1/2 tsp – ginger-garlic paste
• 1/2 tsp – Garam Masala powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Red Chilli powder
• 3 – Curry leaves
• 2 tbsp – Coriander leaves (chopped)
• oil as needed
• salt to taste
Method:
- Cook the parottas. Cut as small pieces or grind into small pieces in a mixie and keep aside.
- Heat the onions, tomato, curry leaves and fennel seed powder and saute well. Add ginger-garlic paste and saute until the raw smell disappears.
- Add the carrot, potato, green peas, green chillies and saute well. Add the green and red capsicum and saute for a while.
- Add the garam masala powder, chilli powder, turmeric powder, pepper powder, salt and the parotta pieces. Cook on simmering heat for about 10 minutes until the parottas are well mixed.
- Add the coriander leaves and put off the flame.
