Ingredients:

• 1 kg – grated Carrot
• 1/4 cup – Sugar
• 2 tsp – Corn flour or plain flour
• 1/2 tsp – Cardamom powder
• 100 g – Almond slivers (optional)
• a few drops – Orange or red food colour (optional)

Method:

  1. Pressure cook the grated carrot and almonds without any liquid for 3-4 whistles. Cool completely.
  2. Extract 1/2 cup carrot liquid and keep aside.
  3. Add the sugar and over low heat, stir well till sugar dissolves.
  4. Mix the flour with carrot liquid to make a paste and add to carrot mixture.
  5. Stir well and cook for 3-5 mins till a thick mass is formed.
  6. Sprinkle cardamom powder and close the cooker. Take off heat.
  7. Just before serving, stir again.
  8. Serve hot or cold.
