
Ingredients:
• 2 cups – Broccoli (chopped as small florets)
• 1 cup – Roasted red bell pepper (chopped)
• 1 – Big Onion (chopped finely)
• 1 tsp – Parsley leaves (chopped)
• 3 – eggs
• 1 cup – Cornmeal
• 1.5 cups – all – purpose flour
• 1 tsp – Baking powder
• 1/2 tsp – Baking soda
• 1/2 cup – Olive oil
• 1 cup – Buttermilk
• Pepper powder
• Salt
Method:
- Preheat the oven to 350 degrees F.
- Mix the flour, cornmeal, baking powder, baking soda, salt and pepper powder together and keep aside.
- Beat the eggs with olive oil until they turn pale.
- Heat a few drops of oil in a pan and saute the onion and broccolis along with parsley leaves until the vegetables get partially cooked.
- Now add the buttermilk to the egg-oil mixture, whisk for a few minutes, gradually add the sauteed vegetables and chopped roasted bell pepper and give a quick stir.
- Add the dry ingredients to the wet ingredients, mix gently and pour this mixture into greased cake mould.
- Bake in middle rack for 30-35 minutes or until a skewer inserted comes out clean.
- Serve warm with a simple salad or grilled meat. This cake can be conserved for 2-3 days in fridge. Warm it in microwave oven before serving. Recipe courtesy: Priya Easy N Tasty Recipe
