
Ingredients:
• 1 – tender, medium-sized, Snake gourd
• 2-3 – medium-sized Potatoes
• 2 – Green chillies
• 3 – Cloves of Garlic
• 2 – Shallots
• A pinch of Turmeric powder
• salt to taste
• Oil for frying
• Rice powder
Method:
- Scrape the snake gourd and cut it in to halves/quarters.
- Remove the seeds.
- Meanwhile, boil the potatoes
- Heat a bit of oil in a pan. Add chopped shallots and crushed garlic.
- Fry till onions are soft.
- Mash the potatoes. Add the shallot mixture, crushed green chillies, turmeric and salt to taste.
- Stuff the snake gourd with the potato mixture.
- Cut the stuffed snake gourd in 1/2 cm thick circles.
- Stick the potato mixture to the inner sides of the circle if it tends to come out.
- Coat with rice powder and shallow fry in a bit of oil.
- Serve hot with mint chutney.
