Ingredients:

• One and a half cups – fresh strawberries, cleaned
• 3 tbsp – sugar, ground
• 500 ml – soya Milk plain
• 2 tbsp – fresh Cream or malai
• 4 to 5 drops vanilla essence
• 4 to 5 drops Strawberry essence

Method:

  1. Puree the strawberries in an electric blender till smooth.
  2. Add sugar and run a bit again, to mix.
  3. Add soya milk and 4-5 drops of each essence.
  4. Blend till smooth.
  5. Pour into ice cream churner by adding fresh cream.
  6. Pour into ice cube trays and allow it to set.
  7. Transfer them into a large container.
  8. Mash coarsely with a wooden spoon.
  9. Beat till smooth with an electric or manual hand blender.
  10. Transfer to an airtight container. Store in freezer.
  11. Allow to set firmly before serving.
  12. If it gets too hard keep outside for a few minutes before serving.
  13. Or defrost in microwave for a few seconds.
