Ingredients:
• 1 – valappu (plantain inflorescence)
• 1 cup – roasted Chickpeas
• 4-5 – Green chillies
• 3 – Onions
• 2 inches stick – Cinnamon
• 2 – Cardamom
• 6 – Cloves
• 1-1.5 tsp – Fennel seeds (saunf)
• 1/2 cup – grated Coconut
• 2 tbsp – Corn flour (or) Rice flour
• refined oil for frying vadas
Method:
- First clean the florets. Banana flowers have many rows of florets within one another (remove the stamen from the florets).
- Add one tbsp of oil to kadai and roast the florets on a low flame until they are soft.
- After it cools for 10 mins, grind it with all the other ingredients.
- Now add rice flour and salt. Shape into small vadas and deep fry in oil.
- Serve hot with meals or as tiffin.
