Ingredients:
• 2 cups – fresh berries
• 2 cup – nonfat frozen vanilla yogurt
• 1/2 cup – Wheat flour
• 2 tbsp – Honey
• 2 tbsp – unsweetened cocoa powder
• 1/2 cup – skim Milk
• 2 – eggs, lightly beaten
Method:
- In a medium bowl, combine the flour and cocoa.
- Add milk, eggs, and honey.
- Stir until combined for about one minute.
- If the mixture is too thick, add more milk, 1 tbsp at a time.
- Coat an 8-inch nonstick frying pan with nonstick spray and heat over medium heat until hot.
- Pour 3 tbsp of batter into the pan and swirl to coat.
- Cook the crepe until it releases easily from the pan for about one minute.
- Turn the crepe and cook on the other side for about 30 seconds.
- Continue until all the batter is gone.
- Mix the berries and yogurt, and spoon over the crepes.
