Ingredients:

• 3 – eggs
• 1/2 cup – ground Almonds
• 1/2 cup – Milk powder
• 1 cup – Sugar
• 1/2 tsp – Saffron strands
• 100g – Butter
• 1 tbsp – flaked Almonds

Method:

  1. Beat the eggs together in a bowl and set aside.
  2. Place the ground almonds, milk powder, sugar and saffron in a large bowl and stir to mix well.
  3. Melt butter in a small saucepan and pour over the dry ingredients.
  4. Mix well with a fork.
  5. Add the beaten eggs to the almond mixture and stir to blend well.
  6. Spread the mixture in a shallow oven-proof dish and bake in a pre-heated oven at 160 degrees C for 45 minutes.
  7. Test whether the cake is cooked by piercing with the tip of the knife or a skewer- it will come out clean if it is cooked thoroughly.
  8. Once it has cooled, cut the almond cake into slices.
  9. Decorate the almond slices with flaked almonds and transfer them into serving plates.
  10. Serve hot or cold.
