Ingredients:

• 1 (3 lbs) Chicken
• 1/4 cup – blanched almonds, skinned and roasted
• 1/2 lb – ground Beef
• 1 cup – cooked white Rice
• 12 tbsp – oil
• 1 Onion grated
• 1 tomato, pureed
• 1/4 cup – Raisins flour
• 1 tsp – Cinnamon
• 1 tsp – Cloves
• 1 tsp – black pepper
• 1 tsp – Cardamom
• 1 tsp – Saffron
• salt to taste

Method:

  1. Thoroughly clean the chicken inside and out.
  2. Rub with flour and salt.
  3. Fry the ground meat, onion and black pepper; add to the cooked rice.
  4. Add the almonds, raisins and spices to the above and mix well.
  5. Stuff the chicken with the mixture and truss.
  6. Fry the chicken in a large pan.
  7. Pour the tomato puree on top, add salt and cook over medium heat until done.
