Ingredients:

• 200 gm – red bell peppers
• 1/2 kg – minced Meat
• 2.5 tbsp – Peanut Butter
• 2 tsp – chopped Garlic
• 2 tbsp – soya sauce
• 100 gm – roasted Cashew nuts
• 3 tbsp – chopped coriander
• 2 – green chillies, seeded and chopped
• 3 tbsp – fresh breadcrumbs
• 2 tbsp – chopped coriander
• oil for frying
• For satay sauce:
• 4 tbsp – sweet chilli sauce
• 3 tbsp – Peanut Butter
• 250 ml – Chicken stock
• 60 ml – Coconut Cream
• 1 tbsp – Lemon juice

Method:

  1. Remove seeds from the red bell peppers and grill it until its skin blackens.
  2. Peel off the skin and chop them.
  3. Combine with remaining burger ingredients.
  4. Blend and shape into patties.
  5. Chill for 30 minutes.
  6. Shallow fry in hot oil until it gets cooked thoroughly.
  7. For the satay sauce, combine the ingredients in a pan.
  8. Simmer it while whisking until it gets thickened.
  9. Stir in coriander to it.
  10. Season and serve with the burgers.
