Ingredients:
• 200 gm – red bell peppers
• 1/2 kg – minced Meat
• 2.5 tbsp – Peanut Butter
• 2 tsp – chopped Garlic
• 2 tbsp – soya sauce
• 100 gm – roasted Cashew nuts
• 3 tbsp – chopped coriander
• 2 – green chillies, seeded and chopped
• 3 tbsp – fresh breadcrumbs
• 2 tbsp – chopped coriander
• oil for frying
• For satay sauce:
• 4 tbsp – sweet chilli sauce
• 3 tbsp – Peanut Butter
• 250 ml – Chicken stock
• 60 ml – Coconut Cream
• 1 tbsp – Lemon juice
Method:
- Remove seeds from the red bell peppers and grill it until its skin blackens.
- Peel off the skin and chop them.
- Combine with remaining burger ingredients.
- Blend and shape into patties.
- Chill for 30 minutes.
- Shallow fry in hot oil until it gets cooked thoroughly.
- For the satay sauce, combine the ingredients in a pan.
- Simmer it while whisking until it gets thickened.
- Stir in coriander to it.
- Season and serve with the burgers.
