
Ingredients:
• 1 cup – moong dal (soak overnight).
• 4 – red chillies.
• 1/4 inch – Ginger (as per taste).
• Salt to taste.
• 1/2 tsp – cumin.
• Ingredients for filling:
• 1 cup – chopped onion.
• Cilantro.
• Cheese singles.
• Parmesan Cheese (grated)|
Method:
- Blend the soaked moong dal and the rest of the ingredients to a thick batter. Allow it to rise for half an hour.
- On a non-stick tava/iron griddle, spread the batter to a fine dosa (not too small or big).
- Now, take the pesarattu, place the cheese single or spread any cheese of your choice, top with chopped onions, cilantro, parmesan cheese and roll.
- Cut (French cut) the rolls to smaller size and microwave for 10 seconds (for the cheese to melt).
- On the serving plate, place the rolls and prick tooth picks to hold them together. Garnish with cilantro. Serve with spicy chutney.
