Ingredients:

• 1 cup – moong dal (soak overnight).
• 4 – red chillies.
• 1/4 inch – Ginger (as per taste).
• Salt to taste.
• 1/2 tsp – cumin.
• Ingredients for filling:
• 1 cup – chopped onion.
• Cilantro.
• Cheese singles.
• Parmesan Cheese (grated)|

Method:

  1. Blend the soaked moong dal and the rest of the ingredients to a thick batter. Allow it to rise for half an hour.
  2. On a non-stick tava/iron griddle, spread the batter to a fine dosa (not too small or big).
  3. Now, take the pesarattu, place the cheese single or spread any cheese of your choice, top with chopped onions, cilantro, parmesan cheese and roll.
  4. Cut (French cut) the rolls to smaller size and microwave for 10 seconds (for the cheese to melt).
  5. On the serving plate, place the rolls and prick tooth picks to hold them together. Garnish with cilantro. Serve with spicy chutney.
