
Ingredients:
• 675 g – sausages, cut into 1 inch pieces
• 1 cup – onion, sliced in thin rounds
• 1 tbsp – oil
• 9 baby Potatoes or new red Potatoes, quartered
• 1 green capsicum, diced
• 1/2 tsp – pepper
• 1/2 tsp – Thyme
• salt to taste
• 1/2 cup – fresh parsley, chopped
Method:
- Combine oil, sausages, onions, potatoes, capsicum, salt, pepper and thyme in a heavy bottomed pan, medium.
- Cover and cook until potatoes are tender.
- Stir in the remaining ingredients.
- Stir and cook over medium high heat until potatoes are browned.
- Lower the heat to cook uncovered until potatoes are crisp-tender.
