Ingredients:

• Rice – 2 cups
• 1 inch – Cinnamon stick
• 3 – Bay Leaves
• 5 – Cloves
• 5 – pepper Corn
• 1 – Onion
• 1 -tomato
• 1 – bunch Mint leaves
• Oil – 3 tbsp
• Cumin – 1 tbsp
• 2 – Green chillies
• Coriander for garnishing
• Lemon juice- 1/2 tbsp
• Salt as per taste.

Method:

  1. Cook rice with 4 cups of water in a rice cooker or pressure cooker with the whole spices. Let it cool.
  2. In a kadai, pour oil and add cumin and fry till brown.
  3. Add green chillies, onion, tomatoes and fry well.
  4. Then add the rice and mix well.
  5. Add salt, lemon juice and chopped pudina leaves. Mix well.
  6. Garnish with coriander and serve.
