
Ingredients:
• 3 cups mixed vegetables (potato, carrot, beans, cauliflower)
• 1 cup onion, finely chopped
• 1 cup grated Coconut
• 1.5 cups of green peas, shelled
• 1.5 tsps Turmeric powder
• 6-8 dry Red Chillies
• 2 tsps Coriander seeds
• 2 tsps Poppy Seeds
• 2 pieces Cinnamon
• 2 cm pieces of Ginger
• 8 cloves, Garlic
• 3 tbsps coriander leaves, chopped
• 1 tbsp roasted Bengal Gram
• Salt to taste
• 3 Cloves
• 3 tbsps oil
Method:
- Cook vegetables with 2 cups of water, salt and turmeric.
- Dry roast chillies, coriander seeds, poppy seeds, cloves and cinnamon. Powder them together.
- Grind ginger, garlic, coriander leaves, coconut and roasted gram together to a fine paste.
- Heat the oil and fry the onions till golden brown.
- Add the ground paste and fry for 2 mins.
- Add the powdered masala and 1 cup of water and allow it to simmer for 5 mins.
- Add the cooked vegetables and let it simmer for 3 more mins.
