
Ingredients:
• 2 cups – packed Brown sugar
• 1 cup – mashed Banana
• 2 – Egg
• 1 tsp – vanilla extract
• 2 tbsp – vegetable oil (optional)
• 3 cups – all purpose flour
• 2 tsp – baking soda
• 1 tsp – salt
• 1.5 tsp – ground Cinnamon
• 1/2 tsp – ground allspice
• 1 tbsp – ground Cardamom
• 1/2 tsp – ground Clove
• 2 cups – dark beer
• 1.5 cups – Walnut (chopped)
• 2 tbsp – all purpose flour
• 2 cups – Dates (pitted and chopped)
• 2 tbsp – fresh Ginger root (minced)
Method:
- Preheat an oven to 175 degrees Celsius.
- Lightly grease two 9 by 5 inch loaf pans.
- In a large bowl, cream the brown sugar, banana, eggs and vanilla extract.
- For a moister bread, add oil.
- In a separate bowl, sift together 3 cups of flour, baking soda, salt, cinnamon, allspice, cardamom and cloves.
- Blend the flour mixture and beer into the creamed mixture.
- Add the walnuts and remaining 2 tbsp of flour.
- Stir in the dates and ginger and blend the mixture well.
- Pour into the greased loaf pans.
- Bake at 175 degrees for an hour or until a toothpick inserted into the preparation emerges dry and clean.
