Ingredients:

• 1/2 cup – bottled barbecue sauce
• 4 – skinless, boneless Chicken breast halves
• 1 – green pepper, cut into strips
• 1 – sweet red pepper, cut into strips
• 4 – small baking Potatoes or 12 – new Potatoes, thinly sliced
• 1/4 tsp – ground black pepper

Method:

  1. Preheat an oven to 350 degrees F.
  2. Tear off two pieces of foil the size of a cookie sheet. Place one piece of foil on a cookie sheet.
  3. Spoon half of the barbecue sauce on the centre of the foil.
  4. Layer the chicken, green and red peppers and potatoes on top.
  5. Sprinkle with black pepper.
  6. Top with the remaining barbecue sauce.
  7. Place the remaining piece of foil on top.
  8. Seal the edges with double folds.
  9. Bake for 50 minutes.
  10. Carefully open the packet and check the chicken.
  11. If the chicken is still pink, close the packet and bake for another 5 minutes or until done.
