Ingredients:

• 1 Chicken
• 60 gms – flour
• 60 gms – Corn flour
• 100 gms – Tomato sauce
• 100 gms – Onions
• 1 bunch Spring onions
• Salt and pepper to taste
• 30 ml – Chicken stock
• 15 ml – oil
• 1 small piece Ginger
• 6 Cloves Garlic
• 30 gms – Corn flour (for gravy)
• 2 pinches ajinomoto
• Oil for deep frying.

Method:

  1. Debone chicken and cut into cubes.
  2. Make batter using both flour and corn flour.
  3. Add chicken and coat well. Drain.
  4. Deep fry chicken cubes.
  5. When crisp remove.
  6. Heat oil and add crushed ginger, garlic and sliced onions.
  7. Then add tomato sauce, stock and seasoning.
  8. Add corn flour blended with a little cold water.
  9. Cook till gravy thickens.
  10. Add fried chicken cubes and remove.
  11. Serve hot.
