Ingredients:
• 1 Chicken
• 60 gms – flour
• 60 gms – Corn flour
• 100 gms – Tomato sauce
• 100 gms – Onions
• 1 bunch Spring onions
• Salt and pepper to taste
• 30 ml – Chicken stock
• 15 ml – oil
• 1 small piece Ginger
• 6 Cloves Garlic
• 30 gms – Corn flour (for gravy)
• 2 pinches ajinomoto
• Oil for deep frying.
Method:
- Debone chicken and cut into cubes.
- Make batter using both flour and corn flour.
- Add chicken and coat well. Drain.
- Deep fry chicken cubes.
- When crisp remove.
- Heat oil and add crushed ginger, garlic and sliced onions.
- Then add tomato sauce, stock and seasoning.
- Add corn flour blended with a little cold water.
- Cook till gravy thickens.
- Add fried chicken cubes and remove.
- Serve hot.
