
Ingredients:
• Yam – 500 g
• Oil – 4 tbsp
• Shallots (small onions) – 1/2 cup, finely chopped
• Garlic – 1 tbsp, minced
• Ginger – 2 tbsp, minced
• Chilli powder – 1 tsp
• Black pepper powder – 1 tsp
• Cumin powder – 1 tsp
• Dark soya sauce – 1 tsp
• Vinegar – 1 tbsp
• Sugar – 1 tsp
• MSG – 1/2 tsp, optional
• Salt to taste
Method:
- Cut the washed and peeled yam into big chunks and boil until tender. Drain well
- Now cool and grate it coarsely.
- Heat oil in a pan and saute the shallots, garlic and ginger until pink.
- Add the grated yam and stir fry till it browns.
- Mix all the powders with 1/2 cup of water and add to the pan.
- Cook for 1 minute.
- Now add the remaining ingredients, cook for 1 more minute and remove from fire.
- Serve hot with fried rice.
