
Ingredients:
• 5 – eggs
• 3 – medium sized Onions (finely chopped)
• 4 – Green chillies (finely chopped)
• 3 – medium sized Tomatoes (finely chopped)
• 2 tsp – Red Chilli powder
• 2 tsp – coriander powder
• 1/2 tsp – Turmeric powder
• 5 tbsp – oil
• Handful of Coriander leaves (finely chopped)
• Salt to taste
Method:
- Break the eggs in a bowl and keep aside.
- Lightly heat oil in a kadai. Add onions and green chillies.
- Saute on a low flame till onions turn pink.
- Add tomatoes and cook for 5 mins on a medium flame.
- Add the powdered masalas and salt.
- Cook on a low flame till oil separates.
- Add the eggs and stir continuously till eggs are cooked.
- Add coriander leaves and simmer for 2 minutes.
- Serve hot with rotis.
