Ingredients:

• 5 – eggs
• 3 – medium sized Onions (finely chopped)
• 4 – Green chillies (finely chopped)
• 3 – medium sized Tomatoes (finely chopped)
• 2 tsp – Red Chilli powder
• 2 tsp – coriander powder
• 1/2 tsp – Turmeric powder
• 5 tbsp – oil
• Handful of Coriander leaves (finely chopped)
• Salt to taste

Method:

  1. Break the eggs in a bowl and keep aside.
  2. Lightly heat oil in a kadai. Add onions and green chillies.
  3. Saute on a low flame till onions turn pink.
  4. Add tomatoes and cook for 5 mins on a medium flame.
  5. Add the powdered masalas and salt.
  6. Cook on a low flame till oil separates.
  7. Add the eggs and stir continuously till eggs are cooked.
  8. Add coriander leaves and simmer for 2 minutes.
  9. Serve hot with rotis.
