
Ingredients:
• 250 g – seedless black and green Grapes
• 1/2 – apple, diced
• 1 – medium Capsicum
• 2 tsp – Mint leaves, finely chopped
• 1 tbsp – sesame seeds
• For dressing:
• 1 tbsp – golden or treacle syrup
• 1 tsp – Vinegar
• 1 – tiny green chilli, finely chopped
• 1 tsp – mustard paste
• 1 tbsp – eggless mayonnaise
• 1 tsp – light Olive oil
Method:
- Roast capsicum over direct flame till skin chars. and put it in a plastic bag, to sweat.
- Peel the black portion and keep it aside.
- Chop grapes into half vertically, dice apple into cubes.
- Whip the ingredients for the dressing with a small balloon whisk till opaque and frothy.
- Put fruit in a bowl, sprinkle sesame over them.
- Pour prepared dressing over fruit, toss lightly to blend flavours.
- Serve cold and garnish with salad leaves or coriander leaves.
