Ingredients:
• Basmati Rice – 2 cups ( washed and soaked )
• Peas – 1/2 cup
• Corn – 1/2 cup
• Tomatoes – 1 thinly chopped
• Carrot 1 cup grated
• Capsicum ( yellow , Orange and green ) 1/2 each long slices
• Egg Whites 6
• Garam Masala – 2 tsp
• Curry leaves – 1 stalk
• Coriander -2 tbsp chopped
• Salt – to taste
• Water – 5 cups
• Olive oil – 1 tsp
Method:
- After washing rice soak in 5 cups of water and salt for one hour.
- Wash all the vegetables thoroughly. Take a clean microwave bowl.
- Grease the bowl with oil or ghee. Put all the vegetables in the bowl, sprinkle salt and water on top of them. Microwave for 2 mins.
- Take another microwave bowl, cook rice separately until cooked (approx. 20 mins). Mix cooked rice with the vegetables .
- Add salt and garam masala, curry leaf.
- Pour egg white on top layer , microwave for 2-4 mins.
- Sprinkle with coriander leaves and black pepper powder and serve hot. You don’t need any curry with this rice. Enjoy with a glass of wine.
