
Ingredients:
• 2 – Onions (big and chopped lengthwise)
• 2 – Leeks (white part and chopped finely)
• 3 cups – Vegetable broth
• 1/4 tsp – Dry Basil leaves
• 1/4 tsp – Pepper powder
• 2 tsp – Corn flour
• 1/2 cup – Water
• Salt
• Cream (as per need)
• 1 tbsp – Olive oil
Method:
- Heat olive oil in a large sauce pan, add the chopped onions, saute until onions turn translucent.
- Add the chopped leeks and saute until the leeks are half-cooked.
- Now add the vegetable broth, dry basil leaves, pepper powder and salt.
- Cook on simmer with lid closed until vegetables are cooked.
- Meanwhile, make a thin white sauce with corn flour and water.
- Now add this sauce to the cooked vegetables and cook until soup thickens.
- Serve hot.
