Ingredients:

• 3 cups mixed vegetables (potato, carrot, beans, cauliflower)
• 1 cup onion, finely chopped
• 1 cup grated Coconut
• 1.5 cups of green peas, shelled
• 1.5 tsps Turmeric powder
• 6-8 dry Red Chillies
• 2 tsps Coriander seeds
• 2 tsps Poppy Seeds
• 2 pieces Cinnamon
• 2 cm pieces of Ginger
• 8 cloves, Garlic
• 3 tbsps coriander leaves, chopped
• 1 tbsp roasted Bengal Gram
• Salt to taste
• 3 Cloves
• 3 tbsps oil

Method:

  1. Cook vegetables with 2 cups of water, salt and turmeric.
  2. Dry roast chillies, coriander seeds, poppy seeds, cloves and cinnamon. Powder them together.
  3. Grind ginger, garlic, coriander leaves, coconut and roasted gram together to a fine paste.
  4. Heat the oil and fry the onions till golden brown.
  5. Add the ground paste and fry for 2 mins.
  6. Add the powdered masala and 1 cup of water and allow it to simmer for 5 mins.
  7. Add the cooked vegetables and let it simmer for 3 more mins.
