Ingredients:
• 4 – medium size Potatoes
• 10 – Curry leaves
• 3 – big dry Red Chillies
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Red Chilli powder
• 1 tbsp – coriander powder
• 1 tbsp – masala of your choice
• Salt to taste
• Coconut oil for frying
Method:
- Boil the potatoes in a cooker and keep it aside.
- When the potatoes have cooled, remove the skin and cut them into cubes.
- Heat oil in a pan and fry the potatoes in it.
- Add turmeric powder, chilli powder, coriander powder and masala of your choice and stir well.
- Add salt.
- Sprinkle water and stir well.
- When it becomes dry, add 2 tsp oil and fry again in a low flame.
- In another small pan add oil and put the chillies in it.
- Add the curry leaves and stir.
- Add the seasoning to the aloo masala and remove from fire.
- Aloo fry is ready.
- Remove to a serving bowl and serve with chapattis or pulao.
- Garnish with coriander leaves or cashews nuts.
