Ingredients:

• 4 – medium size Potatoes
• 10 – Curry leaves
• 3 – big dry Red Chillies
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Red Chilli powder
• 1 tbsp – coriander powder
• 1 tbsp – masala of your choice
• Salt to taste
• Coconut oil for frying

Method:

  1. Boil the potatoes in a cooker and keep it aside.
  2. When the potatoes have cooled, remove the skin and cut them into cubes.
  3. Heat oil in a pan and fry the potatoes in it.
  4. Add turmeric powder, chilli powder, coriander powder and masala of your choice and stir well.
  5. Add salt.
  6. Sprinkle water and stir well.
  7. When it becomes dry, add 2 tsp oil and fry again in a low flame.
  8. In another small pan add oil and put the chillies in it.
  9. Add the curry leaves and stir.
  10. Add the seasoning to the aloo masala and remove from fire.
  11. Aloo fry is ready.
  12. Remove to a serving bowl and serve with chapattis or pulao.
  13. Garnish with coriander leaves or cashews nuts.
