Ingredients:

• 2.5 cups – raw, grated Sweet Potatoes
• 1 cup – Molasses
• 2 – eggs
• 2 cups – rich Milk
• 1 tbsp – melted Butter
• 1 tsp – ground Ginger or grated Orange rind
• 1 tbsp – Brown sugar
• 1/2 tsp – powdered Cinnamon

Method:

  1. Add the molasses, well-beaten eggs, milk, melted butter and ginger/orange rind, in the order mentioned, to the grated potatoes.
  2. Turn into a well-greased baking pan and bake for about 45 mins in a moderate oven.
  3. Sprinkle the brown sugar and cinnamon over the top at the end of the first 25 mins.
