Ingredients:

• 1 cup – Rice flour (fine variety)
• 2 tbsp – Urad Dal flour
• 3/4 tbsp – coconut, grated
• 2 tbsp – Butter
• 1/2 tbsp – sesame seeds
• Salt, as required

Method:

  1. Dry roast both the flours and sieve them well together.
  2. Dry roast the coconut briefly to remove the moisture.
  3. Then add it to the flours, along with butter, sesame seeds and salt. Mix well.
  4. Add water little by little to form a soft dough.
  5. Then roll into small balls – just a little bigger than peas – and arrange on a clean cloth.
  6. Let it sit for 1/2 an hour for the moisture to leave.
  7. Prick a single hole in each ball with a pin.
  8. Heat oil and gently drop the balls in batches.
  9. Keep the flame at a medium and fry till golden brown; drain on a kitchen towel or tissue paper.
  10. Allow it to cool and store in an airtight container.
