Ingredients:

• 1 cup – Maida
• a pinch – salt
• 1/2 tsp – baking powder
• 4 tbsp – cocoa
• 5 tbsp – hot water
• 75 ml – Milk
• 3/4 cup – powdered Sugar
• 1 tsp – vanilla essence
• 1/2 cup – Butter
• 2 eggs

Method:

  1. Mix Maida with salt and baking powder.
  2. Mix cocoa with hot water. Add milk and 1/4 cup of sugar.
  3. Mix well and cook slowly till the mixture is like custard. (Avoid over cooking) Add the essence. Allow to cool.
  4. Beat butter with remaining sugar.
  5. Add the egg yolks one by one, beating well after each addition.
  6. Fold in the Maida alternately with the cooled sauce.
  7. Gently fold in the stiffly beaten egg whites. Bake in a moderate oven (180 degrees centigrade ) till done. (About 30 minutes).
