Ingredients:

• 2 tsp – oil
• 6 – Garlic cloves, finely chopped (or 1 onion, finely sliced)
• 1 cup (100 g) – Drumstick leaves
• 2 – eggs, beaten well with 1/2 tsp – salt and 1/2 tsp – pepper powder
• 1/4 tsp – Red Chilli powder

Method:

  1. Wash and clean drumstick leaves.
  2. Heat oil in a pan.
  3. Add chopped garlic / sliced onion and fry till golden brown in colour on low to medium heat.
  4. Add drumstick leaves and stir well for 2 – 3 minutes.
  5. Add beaten egg.
  6. Mix all the ingredients well.
  7. Adjust salt and pepper powder / sprinkle red chilli powder.
  8. Cover with a lid and cook on low to medium heat for 10 minutes or till drumstick leaves are well combined with egg mixture.
  9. Open the lid and stir continuously for 2 – 3 minutes.
  10. Serve hot with rice/rotis.
