Ingredients:

• 2 cups – whole Wheat pastry flour
• 1 tbsp – active Dry yeast
• 1 cup – lukewarm water
• 1 tsp – salt
• 1 tsp – Sugar
• 1 tbsp – sesame seeds
• 1/4 cup – Olive oil

Method:

  1. Mix the yeast, sugar and salt in lukewarm water and keep aside for 5 minutes until the yeast mixture turns foamy.
  2. Mix the whole wheat pastry flour with sesame seeds.
  3. Gradually add the foamy yeast and olive oil, and knead into a soft dough.
  4. Place the dough in a greased bowl, cover with a towel and keep in a warm place.
  5. Let it sit for an hour until it doubles in volume.
  6. After an hour, punch down the dough and knead again.
  7. Flatten the dough with a rolling pin and cut into 6 long strips.
  8. Arrange them one over the other and cut again into 10-12 pieces.
  9. Arrange these pieces one by one in greased muffin moulds and let them sit for an hour.
  10. Preheat the oven to 350 F.
  11. Brush the breads with olive oil, sprinkle some sesame seeds on top and bake on the middle rack for 15-20 minutes until a golden brown crust forms over the bread.
