
Ingredients:
• 1 cup – basmati Rice
• 3/4 cup – Sugar
• 3 cups – boiling water
• 1/2 tsp – Cardamom powder
• 1 small piece – Cinnamon
• 1 cup – golden Raisins
• 1/2 cup – pure Ghee
• A little Saffron colour dissolved in 2 tsp of water
Method:
- Wash and soak basmati rice for 15-20 mins. Heat ghee in a skillet.
- Drain the rice.
- Add to ghee, and saute for 5 minutes, till golden colour.
- Add boiling water to rice.
- Simmer uncovered till half-done (approx 10 mins).
- Add raisin and let it cook, till rice is just about but not yet done.
- Add sugar, cinnamon, cardamom and saffron.
- Cook till all water dries up.
- Serve hot.
