
Ingredients:
• 1 lb – Button mushrooms, chopped
• 1/2 lb – Shitake mushrooms, chopped
• 1 – large carrot, finely diced
• 2 – stems celery, finely diced
• 1 – red onion, finely chopped
• 3 petals – garlic, finely diced
• 2 tbsp – Olive oil or Butter
• 1 pint – heavy Cream
• 1/2 tsp – ground black pepper
• Salt to taste
Method:
- Heat olive oil in a skillet.
- Add garlic, onion, carrot, celery and saute well till the oil is drained.
- Add mushrooms and cook them well.
- Put the cooked mixture in a grinder and make a puree, adding heavy cream.
- Bring the puree to a boil.
- Add the seasoning and serve hot.
