
Ingredients:
• Avocado – 2 medium sized, cut into small pieces
• Coconut Milk – 100 ml
• Carrot – 2 medium sized ones cut into small pieces
• Onion -1 medium sized – diced
• Tomato – 1 medium sized – grated
• Turmeric powder – 1/2 teaspoon
• Red Chilli powder – 1/2 teaspoon
• Ginger paste – 1 tsp
• Coriander powder – 1 tsp
• Salt to taste
Method:
- Heat oil in a pan
- Add ginger paste to it and cook for 2 minutes.
- Slowly add the onions and tomatoes. Cook until they soften.
- Now add the diced carrots and avocado to it.
- Add the turmeric, coriander and red powder.
- Add 1 cup water so that it softens completely.
- Now add the coconut milk. Add salt to taste.
- Cover with a lid and cook for 5 minutes.
