
Ingredients:
• Maida – 1 cup
• Rice flour – 1/4 cup
• Curd – 2 tbsp
• Salt according to taste
• Coriander leaves, chopped – 1 tbsp
• Oil for deep frying
• Baking soda, a pinch
• For Garlic Chutney:
• Garlic – 10 flakes
• Ripe Desi Tomatoes – 2
• Sambar Onions – 4
• Red Chillies – 5
• Tamarind Extract – 1 tsp
• Lime Juice – 1/2 tsp
• Salt to taste
• Sugar – 1/4 tsp
Method:
- Sift maida, rice flour and salt.
- Add curd to the sifted flour.
- Add water and mix well, making a thick batter.
- Keep for 2 hours, then add coriander leaves and baking soda to the batter and mix well.
- Heat oil. Take batter in your hands, make a ball and drop in the oil.
- Fry till golden brown in colour.
- Serve hot with garlic chutney.
- For garlic chutney:
- Cook tomatoes along with tamarind, salt and onions.
- Grind to a fine paste with the other ingredients.
