Ingredients:
• 2 cups – fresh pineapple, peeled and cut into small pieces
• 2 cup – Milk
• 1 cup – Sugar
• 1/2 cup – flour
• 1/2 cup – Butter
• 1 packet – Marie biscuits
• 6 – Egg yolks
• 3 tbsp – cocoa
• 1 tsp – vanilla essence
• 2 tbsp – walnuts, chopped
Method:
- Add 1/2 cup of sugar to pineapple with 1/2 cup of water.
- Simmer gently till the pineapple pieces are slightly softened. Leave aside to cool.
- Beat the egg yolks with remaining sugar till thick and light.
- Add the cocoa and beat till smooth.
- Mix flour with 1/2 cup of milk to a smooth paste.
- Add the remaining milk to the egg yolk mixture.
- Place on a low flame. Stir and cook till the mixture is hot.
- Add the flour paste and continue to cook till the mixture begins to simmer.
- Simmer gently for 2 more minutes.
- Remove from heat and beat in the butter and vanilla essence.
- Take a 7-inch square dish. Arrange a layer of biscuits at the base.
- Spread half of the pineapple mixture over it.
- Spread it with 1/3 of the chocolate mixture.
- Repeat the layers, and end it with the chocolate mixture.
- Sprinkle chopped walnuts on top and leave in the refrigerator to chill.
- Cut into slices and serve cold.
