Ingredients:
• 1.5 cups – unbleached flour
• 2 tsp – baking powder
• 1/2 cup – shredded Coconut
• 2 tbsp – maple syrup
• 2 tbsp – Honey
• 3/4 to 1 cup – reduced fat Milk
• 6 – Egg whites
• 1/2 cup – fat-free-egg-substitute
• 4 tbsp – Canola Oil
Method:
- Preheat your waffle iron.
- Mix the flour, baking powder and coconut in a large bowl.
- Whisk together the syrup, honey and egg substitute in a small bowl.
- Stir in the oil and milk.
- In a medium bowl, beat the egg whites until stiff.
- Make a well in the centre of the dry ingredients.
- Pour in the liquid mixture and mix well.
- Then gently fold the egg whites into the batter.
- Bake in the waffle iron until golden brown.
