
Ingredients:
• 175 g short cut macaroni
• 50 g Butter
• 7 tbsp flour, pinch dry mustard
• salt and pepper
• 600 ml. Milk
• 175 g cheddar cheese grated
• Crisp crumbs
• To prepare crisp crumbs:
• 4 slices fresh bread
• 50 g Butter
Method:
- Boil the macaroni and allow to stand.
- Make a white sauce with the butter, flour, seasonings and milk.
- Stir in about 100 g cheddar cheese.
- Thoroughly drain the fully cooked macaroni and return to the casserole.
- Stir in the cheese sauce.
- Sprinkle over the remaining cheese and crisp crumbs.
- Reheat on medium high until bubbling, about 3 – 6 minutes.
- To prepare crisp crumbs:
- Remove the crusts from the bread and make into crumbs.
- Melt the butter in a shallow plate, 1-2 minutes.
- Thoroughly sift in the crumbs.
- Cook until crisp, about 2-4 minutes, stirring frequently so that the crumbs will be an even golden brown.
- Continue to cook until the desired colour.
- Allow to complete cool, then store in an airtight container.
