Ingredients:

• 175 g short cut macaroni
• 50 g Butter
• 7 tbsp flour, pinch dry mustard
• salt and pepper
• 600 ml. Milk
• 175 g cheddar cheese grated
• Crisp crumbs
• To prepare crisp crumbs:
• 4 slices fresh bread
• 50 g Butter

Method:

  1. Boil the macaroni and allow to stand.
  2. Make a white sauce with the butter, flour, seasonings and milk.
  3. Stir in about 100 g cheddar cheese.
  4. Thoroughly drain the fully cooked macaroni and return to the casserole.
  5. Stir in the cheese sauce.
  6. Sprinkle over the remaining cheese and crisp crumbs.
  7. Reheat on medium high until bubbling, about 3 – 6 minutes.
  8. To prepare crisp crumbs:
  9. Remove the crusts from the bread and make into crumbs.
  10. Melt the butter in a shallow plate, 1-2 minutes.
  11. Thoroughly sift in the crumbs.
  12. Cook until crisp, about 2-4 minutes, stirring frequently so that the crumbs will be an even golden brown.
  13. Continue to cook until the desired colour.
  14. Allow to complete cool, then store in an airtight container.
