Ingredients:
• For pastry:
• 2.5 cups – all-purpose flour
• 1/2 cup – shortening, cut into pieces
• 1/2 tsp – salt
• 6 tbsp – cold butter, cut into pieces
• 4 – 8 tbsp – cold water
• For filling:
• 2 cups – Cranberries
• 1 cup – superfine Sugar
• 1/2 cup – dark Brown sugar
• 1/2 cup – Raisins
• 2 – large cooking apples
• 1 – Orange of grated rind
• 3 tbsp – Orange juice
• 4 tbsp – chopped Walnuts
• 1 tbsp – flour
Method:
- For the crust, sift the flour and salt.
- Add the butter and fat and rub well. Stir in enough water to make it into a dough.
- Divide it into 2 equal balls, wrap and chill for at least 20 min.
- Put the orange rind and juice in a bowl. Peel and remove the core from the apples. Grate them into the bowl.
- Stir in cranberries, raisins, walnuts, sugar, brown sugar and flour.
- Pre heat the oven to 400 F.
- Roll out one ball of dough about 1/8 inch thick.
- Transfer to a 9 inch pie pan and trim.
- Spoon the cranberry and apple mixture into the case.
- Roll out the remaining dough into a circle and with a serrated pastry wheel or a knife cut the dough into 10 strips.
- Place 5 strips horizontally across the top of the tart at 1 inch intervals.
- Weave in the remaining 5 and trim.
- Sprinkle sugar on the top.
- Bake for 20 min.
- Reduce the heat to 350 F and bake until crust is golden brown and the filling is bubbling for about 15-20 min more.
