Ingredients:

• For pastry:
• 2.5 cups – all-purpose flour
• 1/2 cup – shortening, cut into pieces
• 1/2 tsp – salt
• 6 tbsp – cold butter, cut into pieces
• 4 – 8 tbsp – cold water
• For filling:
• 2 cups – Cranberries
• 1 cup – superfine Sugar
• 1/2 cup – dark Brown sugar
• 1/2 cup – Raisins
• 2 – large cooking apples
• 1 – Orange of grated rind
• 3 tbsp – Orange juice
• 4 tbsp – chopped Walnuts
• 1 tbsp – flour

Method:

  1. For the crust, sift the flour and salt.
  2. Add the butter and fat and rub well. Stir in enough water to make it into a dough.
  3. Divide it into 2 equal balls, wrap and chill for at least 20 min.
  4. Put the orange rind and juice in a bowl. Peel and remove the core from the apples. Grate them into the bowl.
  5. Stir in cranberries, raisins, walnuts, sugar, brown sugar and flour.
  6. Pre heat the oven to 400 F.
  7. Roll out one ball of dough about 1/8 inch thick.
  8. Transfer to a 9 inch pie pan and trim.
  9. Spoon the cranberry and apple mixture into the case.
  10. Roll out the remaining dough into a circle and with a serrated pastry wheel or a knife cut the dough into 10 strips.
  11. Place 5 strips horizontally across the top of the tart at 1 inch intervals.
  12. Weave in the remaining 5 and trim.
  13. Sprinkle sugar on the top.
  14. Bake for 20 min.
  15. Reduce the heat to 350 F and bake until crust is golden brown and the filling is bubbling for about 15-20 min more.
