Ingredients:

• 1 cup – Rava/Sooji (120 gm)
• 3/4 cup – Chopped or blended seedless Dates (100 gm)
• 1 cup – Milk (250 ml)
• 2 tbsp – Oil
• 2 tbsp – Ghee
• 1/4 cup – Granulated Sugar (55 gm)
• 1 tsp – Baking powder
• 1/2 tsp – Cardamom powder
• 3 to 4 – Cashew nuts, broken into small pieces

Method:

  1. Roast the rava on medium flame for 3-4 minutes or till you get a nice aroma and keep aside.
  2. Mix the sugar, cardamom powder, cashew nuts and baking powder well and add to rava.
  3. Next add milk, oil and ghee to the rava mixture and mix well.
  4. Finally add the chopped/blended dates and mix well. Keep aside for 10 minutes.
  5. Pre-heat the oven to 180 degrees C and bake for 30-35 minutes. If a knife comes out clean, your cake is done.
  6. Allow it to cool completely before cutting.
