Ingredients:
• 1 cup – raw Rice
• 1/2 cup – moong dal
• 1.75 cups – Sugar candy (Kalkandu)
• 8 – Cardamom pods
• 15 – Cashew nuts
• 15 – Raisins
• 4 tbsp – Ghee
• 2.75 cups – water
Method:
- Heat a tbsp of ghee in a pan.
- Roast the moong dal in the ghee.
- Pressure cook the raw rice along with the roasted moong dal with 2 cups of water up to 4 whistles.
- Heat a heavy bottomed pan and add kalkandu (sugar candy).
- Add 3/4 cup water so that the sugar candy dissolves.
- Stir the sugar syrup continuously until the syrup turns sticky.
- Now add the rice and dal mixture.
- On a low flame, stir the mixture evenly to blend with the sugar candy syrup.
- Add 2 tbsps ghee slowly and keep stirring for at least 4-5 mins.
- Fry cashews in a tbsp of ghee and add to the dal mixture with powdered cardamom and raisins.
- Serve hot.
