Ingredients:
• 4 bunches – laal shak, clean and chopped (only leaves and soft branches)
• 1 tbsp – whole black Mustard Seeds
• 1 – medium sized potato, peeled and chopped (optional)
• 4 – Green chillies
• 1 tsp – Ginger
• 1/4 tsp – finely chopped Coconut
• 1/4 tsp – finely chopped peanuts, roasted
• 1 tsp or according to taste – salt
• 2 tsp – Sugar
• Oil to fry
Method:
- Heat oil in a heavy bottom vessel.
- Add mustard seeds and let it splutter.
- Add ginger and saute for a few seconds, and then add potato, green chillies, coconut, and peanuts.
- Fry for 1 minute and add shak with salt and sugar.
- Sautee for 2-3 minutes till the ingredients are will mix.
- Close the vessel with a lid and turn down the heat to the lowest point.
- Let it cook till it is done.
- Dry the excess water and serve with steamed rice.
