Ingredients:
• 2 separated eggs
• 1 tsp – Orange essence
• 3 tbsp – Lime juice
• 2/3 cup (cold) – Milk
• 1 cup – powdered Sugar
• 1/2 cup – all purpose flour (Maida)
• 1/2 tsp – salt
Method:
- Preheat the oven to 170 C.
- Beat the egg whites till soft peaks are formed.
- Beat the yolks lightly with essence.
- Add lime juice, sugar and milk.
- Mix flour with baking powder and add to the yolk mixture.
- Mix till smooth.
- Fold in the egg whites.
- Pour the mixture into an ungreased baking dish.
- Place a roasting pan on the rack in the oven.
- Place the baking dish in the pan.
- Pour very hot water in the pan, to a depth of half.
- Bake till the pudding is set and golden brown on top.
- Serve warm or cold.
