Ingredients:
• 2 – Large Brinjals (eggplant)
• 2 – Onions (finely chopped)
• 2 – Tomato (finely chopped)
• 2 tsp – Ginger and Garlic paste
• 2 tsp – Garam Masala
• 2 tsp – Chilli powder
• 2 tsp – Ajwain powder (om seeds)
• 2 tsp – Dhania powder (coriander powder)
• 6 tsp – Oil
• 2 tsp – Jeera
• 2 tsp – Lime juice
• Salt – as per taste
Method:
- Grease the brinjal with some oil all over.
- Make 5-6 slits on the surface of each brinjal with a knife.
- Preheat the oven to 375 deg F and bake the brinjal until it is completely cooked and soft.
- Heat oil in a kadai and add jeera and ginger and garlic paste.
- Add the chopped onion and saute till they become transparent.
- Add chopped tomato.
- Add a little water and cook covered for about 2 mins.
- Add the brinjal to the mixture.
- Add water to get the consistency you need.
- Add all the remaining dry masalas and cook for another 2 mins.
- Remove from stove, add the lime juice and mix well.
- Garnish with cilantro and serve it hot with rotis/chapatis.
